We're adding this to the cocktail menu for September. It's called The Concubine's Bellini.
25ml rose-infused rum
25ml Lychee puree
15ml sugar syrup
1/2 lime squeezed
2 drops vanilla bitters
Hard shake, double strain into a chilled martini glass.
Top with prosecco and garnish with a rose petal or edible flower.
Kate named it after Yang Yuhuan, who was the favoured concubine of Chinese Emperor Li Longji. Her favourite fruit was Lychee, and the Emperor had a special courier service with fast horses bring the fresh fruit from Guangdong.
