Our first two stills, Dinky Dragondale and Daisy Fireglade, shown here, are still used for micro batches of 30 bottles for limited edition bespoke spirits for special customers.
We love applying our creativity to develop these special spirits for clients such as Fortnums who share our love of fine flavours and want to offer something exceptional and exclusive.
Dinky and Daisy were made by hand, to our specification, by an artisan still maker in Porto. The technology was introduced to Portugal by the Moors, where the Portuguese started applying it to making alcoholic drinks.
We still use the ancient techniques in our distillery such as sealing the still with a rye flour paste, however Kate has made a few upgrades, such as building a closed loop heat exchanger to eliminate water waste.
