For those of you who enjoy making cocktails at home, our Christmas Tea Martini will show off your mixology skills.
For the base, you'll need to make tea syrup: make a small pot of tea, adding the same amount of sugar as water and strain. We use Chai Masala but Earl Grey would do.
Then stir the following ingredients in a Japanese mixing glass with ice:
25 ml Chai Masala syrup
15 ml Cinnamon syrup
Strain into a chilled martini or coupe glass.
To make the foam, dry shake (without ice or put a spring in the shaker) or use a whisk or cream whipper:
25 ml Lemon juice
25 ml Sugar syrup
25 ml Egg white
Gently pour the foam onto the martini and garnish with lemon zest. Enjoy!
